As soon as I tasted the Oatmeal Cookie Latte at my local coffee shop, Barista, I knew I had to recreate one to make at home! This latte tastes just like a fresh oatmeal cookie straight out of the oven – with way less guilt. (No judgement though if you want to whip up a batch of cookies to go alongside like I did.) To make it even better, this latte is dairy free!

Cinnamon Walnut Syrup
The first component to this latte is the special Cinnamon Walnut Syrup! It’s a simple syrup that has plenty of uses – coffee, tea, cocktails, etc – and only requires a few ingredients.[/et_pb_text][el_masonry_gallery image_ids=”636,638″ number_of_columns=”2″ _builder_version=”4.17.4″ _module_preset=”default” global_colors_info=”{}”][/el_masonry_gallery][et_pb_text _builder_version=”4.17.4″ _module_preset=”default” global_colors_info=”{}”]Preheat your oven to 350 degrees. Place the walnuts on a baking sheet and bake for 10 – 12 minutes, until they deepen in color. Let the walnuts cool and then roughly chop them. Next add the toasted walnuts to a pot with the cinnamon sticks, honey (or sugar), water and vanilla extract.[/et_pb_text][el_masonry_gallery image_ids=”641,644″ number_of_columns=”2″ _builder_version=”4.17.4″ _module_preset=”default” global_colors_info=”{}”][/el_masonry_gallery][et_pb_text _builder_version=”4.17.4″ _module_preset=”default” global_colors_info=”{}”]Place on the stove on medium until the mixture begins to boil; then reduce heat to low and cook for 10 minutes. Remove from the heat and allow to cool slightly. Strain your mixture removing the walnuts and cinnamon sticks. Oatmeal Cookie Latte
Now that you’ve made the Cinnamon Walnut Syrup you are so close to an Oatmeal Cookie Latte – I bet you can almost taste it!
For each serving, brew 6 ounces of espresso or strong coffee. While the coffee is brewing steam the Oat Milk. This is what really gives the latte that Oatmeal Cookie flavor. If you haven’t tried Oat Milk now is the time! It tastes amazing and is a great dairy free milk replacement. It has become quite popular and there are a number of brands, but I really like Oatly (affiliate link).
Add the espresso or coffee to a cup and mix in 1 to 2 teaspoons of the Cinnamon Walnut Syrup, depending on how sweet you like yours.
Once your Oat Milk is hot you can froth it using either a metal whisk or this nifty little tool. (affiliate link) I received one as a Christmas gift from my sister one year and I LOVE it! If you are using a whisk, vigorously whisk the Oat Milk until it is frothy.
Finally add the frothed milk to your coffee cup and spoon the foam on top. Oatmeal Cookie Latte
Ingredients
Cinnamon Walnut Syrup
- 1/4 cup Walnuts
- 3 whole Cinnamon Sticks
- 1 cup Honey
- 1 cup Water
- 1 teaspoon Vanilla Extract
Oatmeal Cookie Latte
- 1/2 cup Steamed Oat Milk per serving
- 6 ounces Strongly Brewed Coffee or Espresso per serving
- 1 - 2 teaspoons Cinnamon Walnut Syrup per serving, to taste
Instructions
Cinnamon Walnut Syrup
- Preheat your oven to 350 degrees and toast your walnuts on a baking sheet for 10 – 12 minutes, until they deepen in color. Let cool and roughly chop.
- Place your toasted walnuts in a pot along with the cinnamon sticks, honey (or sugar), water and vanilla extract. Bring to a boil over medium heat and then reduce heat to low and continue to cook for 10 minutes. Let cool slightly and strain to remove walnuts and cinnamon sticks.
- The syrup can be stored in the fridge for up to a week.
Oatmeal Cookie Latte
- For each serving brew 6 ounces of strong coffee or espresso.
- While the coffee is brewing, heat up 1/2 cup of Oat Milk (per serving) and froth using either a whisk or milk frother.
- Add the coffee to a cup and stir in 1 to 2 teaspoons of Cinnamon Walnut Syrup, depending on how sweet you prefer yours.
- Pour in the frothed milk and spoon the foam on top. Enjoy!
