Crispy Waffles are the perfect way to start your day!
These waffles are tender and fluffy on the inside, while keeping an irresistible crunch! And even better, I’ve tested some wonderful additions that are sure to take these waffles over the top!
Small Batch Crispy Waffles
This is a small batch recipe – making it great if there’s just a few to feed. This makes 4 – 5 waffles in my waffle maker, but they are fairly thin compared to a Belgian style waffle.
What makes this even better is that it works wonderfully when you double or triple the recipe. So if you have a crowd just scale up the recipe as needed.
And if you do end up with extras they freeze well. To reheat just pop into the toaster or into a 300 degree oven for a few minutes.
What is the Secret of Making Crispy Waffles?
There are a couple of factors that help make these waffles crispy, but the main reason is the corn starch. The addition of cornstarch with the flour helps to prevent gluten forming and absorbs some of the moisture, which equals crispiness.
This waffle batter also requires a bit of rest time, which allows the gluten to relax after mixing. And the fat in the butter and buttermilk also help fry the waffles and keep them crisp!
Finally, make sure to oil your waffle maker (and keep it HOT) to help prevent sticking and ensure a crisp exterior!
If you are finding that your waffles aren’t crisp enough after they come out of the waffle maker you can also pop them in a 350 degree oven for a few minutes directly on the rack.
Variations for Crispy Waffles
- Add 1/4 cup finely chopped pistachios (or other nut) to the batter for a nutty waffle!
- These are amazing topped with powdered sugar and more pistachios (or other nut) or fresh whipped cream and fresh fruit (like strawberries, blueberries, raspberries, blackberries, etc.)
- Add 1/2 tsp of cinnamon for a delightful flavor pop… And then dot the batter with fresh blueberries before shutting the waffle maker to bake them in!
- I love topping these with butter and a tart berry syrup.
- Add 1/4 cup chocolate chips to the batter for a delicious sweet treat!
- These work great topped with warm peanut butter and powdered sugar!
- Add 1/8 – 1/4 tsp (depending on your preference) cardamom, cinnamon and ginger each to the batter for spiced waffles.
- Try topping these with blood orange or lemon curd!
Crispy Waffles
Ingredients
- 1 cup AP Flour
- 1/4 cup Corn Starch
- 1 tablespoon Sugar or Honey
- 1/2 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1/2 cup Butter melted
- 1 large Egg lightly beaten
- 1 teaspoon Vanilla Extract
- 1 cup Buttermilk
Instructions
- Add all ingredients (including optional variations) to a medium bowl and whisk to mix well. The batter will be very thick.
- Allow batter to rest for at least 15 minutes.
- Heat your waffle maker and set to to your desired doneness. Once hot, spray waffle maker with oil and add batter to the middle. (Dot with blueberries if adding before cooking.) Close the lid and cook according to manufacturer directions.
- Remove from waffle maker and serve immediately or keep warm in a 300 degree oven.
- Top with desired toppings like butter, syrup, whipped cream, berries, nuts, powdered sugar, curd, peanut butter, etc.
