Lemon Vinaigrette Dressing
This dressing is light and bright, which perfectly compliments the blood oranges without overpowering them. Whisk olive oil, white wine vinegar, lemon juice, garlic, dijon and honey until honey is dissolved. Set aside while you prepare the rest of the salad.
Parmesan Cheese Crisps
You may have seen the expensive, crisp parmesan cheese sold at your local grocery store, but these cheese crisps are so easy to make at home yourself!
Preheat your oven to 350 degrees. Place mounds of freshly grated parmesan cheese (about 2 tablespoons each) on a baking sheet, leaving space between them to spread during baking. Bake for 7 – 10 minutes until bubbly and just beginning to get golden around the edges. They will get crisp as they cool.
Blood Oranges
Blood oranges aren’t just pretty to look at – they have an almost raspberry-like flavor and boast a large percentage of Vitamin C! If you can’t find Blood Oranges you can substitute Grapefruit.
Cut the oranges into slices and then cut off the rind – leaving you with beautiful pieces to top the salad with!

Bringing It All Together
Wash and dry your preferred salad greens and add them to a large bowl. Toss with lemon vinaigrette. Top with pistachios, crumbled cheese crisps, breadcrumbs, fresh mint leaves and finally the blood orange slices. Serve with fresh cracked pepper and flakey sea salt. What to Serve?
This salad is wonderful as a light lunch or works perfectly alongside fish or chicken dishes. Try serving this alongside my Mac and Cheese or Chicken Pot Pie!
What to Pair?
White Wine
To compliment the citrus flavors try pairing this blood orange salad with a Pino Grigio or Sauvignon Blanc.
Red Wine
A Syrah or Rioja will pair nicely with the blood oranges and pistachios in this salad!

Mixed Greens Salad with Blood Oranges
Ingredients
Lemon Vinaigrette
- 1/4 cup Olive Oil
- 1 tablespoon White Wine Vinegar
- 1/2 large Lemon juiced (about 1/4 c)
- 1 clove Garlic minced
- 1 tablespoon Stone Ground Mustard
- 1 teaspoon Honey
Parmesan Cheese Crisps
- 8 - 10 tablespoons Parmesan Cheese finely grated
Blood Orange Salad
- 3 cups loosely packed Mixed Greens
- 1 medium Blood Orange sliced and rind removed
- 1/4 cup Pistachios
- 6 - 8 leaves Fresh Mint
- 1/4 cup Croutons crushed into Breadcrumbs
- Salt + Pepper for serving
Instructions
Lemon Vinaigrette
- Whisk all ingredients in a small bowl until honey has dissolved. Set aside.
Parmesan Cheese Crisps
- Preheat oven to 350 degrees. Place mounds of parmesan cheese (about 2 tablespoons each) on a baking sheet, leaving room between them for spreading. Bake for 7 – 10 minutes until bubbly and golden around the edges. Allow to cool and crumble.
Blood Orange Salad
- Wash and dry 3 cups of loosely packed salad greens. Cut the blood orange into slices and remove the rind. Toss the mixed greens with the dressing and top with pistachios, cheese crisps, breadcrumbs, mint leaves and blood orange slices.
Notes
If you cannot find Blood Oranges you can substitute Grapefruit
You can substitute any other nut for the pistachios like – almonds, walnuts, hazelnuts…
