Scald milk in a heavy bottomed pan over medium heat. Once you see bubbles form on the bottom of the pan, remove from heat. Add to a small bowl and cool milk to 105 – 115 degrees. Add yeast to warm milk and stir to combine. Next add the butter and salt and stir until the butter has melted.
In a large bowl, beat eggs slightly and then mix in the sugar. Add the milk and yeast mixture to the large bowl and stir to combine. Add 1 cup of flour and mix well. Cover with a kitchen towel and allow to raise in a warm location for 1 – 2 hours, until bubbly and doubled.
Remove cover and add remaining flour. Stir in the flour with a spoon until you can handle the dough. Turn onto a floured surface and knead for 8 – 10 minutes, until the dough is soft and easy to handle. Cover with a towel or plastic wrap and allow to raise in a warm place for an additional 1 – 2 hours, until doubled. If using plastic wrap, make sure to oil lightly to prevent sticking.
Now the dough is ready to use for Cinnamon Rolls, Orange Rolls, Caramel Rolls or even Monkey Bread!
