Rosemary Rhubarb Syrup
I love rhubarb and can’t wait to use it in practically anything! So these margaritas are flavored with a bright and tart rhubarb syrup accented with rosemary.
Rhubarb
Rhubarb is such an amazing vegetable and one of the first vegetables to signal spring![/et_pb_text][el_masonry_gallery image_ids=”1742,1743″ number_of_columns=”2″ _builder_version=”4.17.4″ _module_preset=”default” global_colors_info=”{}” theme_builder_area=”post_content”][/el_masonry_gallery][et_pb_text _builder_version=”4.17.4″ _module_preset=”default” global_colors_info=”{}” theme_builder_area=”post_content”]Add the rhubarb, water, honey and rosemary to a small pot on medium heat. Cook for 10 – 15 minutes, stirring occasionally. The rhubarb will have turned into a mush. You can save the rosemary rhubarb pulp for ice cream or pancakes – or make a strawberry rhubarb dessert (like pie or crisp) and add this as well.
Mixing
Add the tequila, lime juice, orange juice, grand mariner, and rosemary rhubarb syrup to a shaker with ice. Shake until chilled and strain into a glass filled with ice. Voila! Fresh Rosemary Rhubarb Margaritas!
How to Pair?
These are great with chips and salsa for a get together or try serving them alongside my Pork Carnitas on Savory Corn Waffles!
They would also be fabulous with these Grilled Onion + Skirt Steak Tacos or Green Chicken Tamales!

Rosemary Rhubarb Margaritas
Ingredients
Rosemary Rhubarb Syrup
- 2 cups Rhubarb diced
- 1/4 cup Honey or Sugar
- 1 1/2 tablespoons Fresh Rosemary Leaves
- 1 cup Water
Rosemary Rhubarb Margarita
- 1 1/2 ounces Fresh Lime Juice
- 1 1/2 ounces Fresh Orange Juice
- 2 ounces Rosemary Rhubarb Syrup
- 1/2 ounce Grand Marnier
- 2 ounces Tequila
Instructions
Rosemary Rhubarb Syrup
- Add rosemary, rhubarb, honey and water to a medium saucepan. Cook over medium heat for 10 – 15 minutes, until the rhubarb has turned to a mush.
- Strain the mixture through a fine mesh sieve and allow to cool. You can store this in a sealed container in the fridge for up to a week.
Rosemary Rhubarb Margarita
- Mix lime juice, orange juice, Rosemary Rhubarb Syrup, tequila and Grand Marnier in a cocktail shaker with ice. Strain into a glass filled with ice. Serve with lime or orange wedges!
