Oatmeal Cookie Latte { Dairy Free }

This Oatmeal Cookie Latte tastes just like a fresh cookie out of the oven, but comes with way less guilt! Even better - it's dairy free!

Materials

Cinnamon Walnut Syrup

  • 1/4 cup Walnuts
  • 3 whole Cinnamon Sticks
  • 1 cup Honey
  • 1 cup Water
  • 1 teaspoon Vanilla Extract

Oatmeal Cookie Latte

  • 1/2 cup Steamed Oat Milk per serving
  • 6 ounces Strongly Brewed Coffee or Espresso per serving
  • 1 - 2 teaspoons Cinnamon Walnut Syrup per serving, to taste

Instructions

Cinnamon Walnut Syrup

  • Preheat your oven to 350 degrees and toast your walnuts on a baking sheet for 10 – 12 minutes, until they deepen in color. Let cool and roughly chop.
  • Place your toasted walnuts in a pot along with the cinnamon sticks, honey (or sugar), water and vanilla extract. Bring to a boil over medium heat and then reduce heat to low and continue to cook for 10 minutes. Let cool slightly and strain to remove walnuts and cinnamon sticks.
  • The syrup can be stored in the fridge for up to a week.

Oatmeal Cookie Latte

  • For each serving brew 6 ounces of strong coffee or espresso.
  • While the coffee is brewing, heat up 1/2 cup of Oat Milk (per serving) and froth using either a whisk or milk frother.
  • Add the coffee to a cup and stir in 1 to 2 teaspoons of Cinnamon Walnut Syrup, depending on how sweet you prefer yours.
  • Pour in the frothed milk and spoon the foam on top. Enjoy!
